Keep healthy without breaking the bank! Salmon and beans, simple dinner.

Hey there, this is a recipe that I love. Simple, pretty affordable. Have it on a Friday evening for a simple but healthy (and traditional dinner). Salmon is an oily fish and is very simple to cook. Throw it on some beans with some veg and you've got a lovely tasting meal. 

Ingredients: 

  • Beans (butter, cannellini or any other)
  • Salmon (Scottish salmon is great)
  • Paprika
  • Some veg, any will do really. Throw some aubergine in there or chuck a few pieces of broccoli on). Feel free to be flexible. 
  • Olive oil for drizzling  

Method: 

Preheat the oven to about 180 (fan) or a little warmer for non- fan. Or just read the back of the packet your salmon comes in and follow their advice for temp. Put the salmon in the oven for approx 15 minutes (or again follow the package instructions) I'm not a chef, so don't take all my timings and temp recommends as gospel! Although I write what works for me! 

Cook your veg in whatever way is suitable for your specific veg, fry or boil some broccoli. Or if fry some chunks of aubergine or courgette. Then empty your tins of beans and rinse your beans. Chuck the beans into the frying pan with your veg and cook for a minute, add some paprika (you might need to add a little water to loosen things up), and then continue to fry. Mix everything together and allow the paprika to infuse into the beans and veg. Season to your own taste. 

Once the salmon is done remove from the oven (you want it to flake apart). Leave on the side to rest a minute or so. Take the beans and veg mix out of the frying pan and put into a dinner bowl or on a plate (I love a bowl). Place the piece of salmon on top of the beans and veg mix. Drizzle olive oil over the fish and beans (if using). I personally love olive oil, a good one always adds to so many meals when simply drizzled over some food. 

And that's about it. A fantastic little dinner. Beans are good for you, the NHS recommends them as one of a five a day. Plus, salmon is stuffed full of fatty acids which are great for your heart! I will upload an image next time I cook this very meal :)
